Guilt free chocolate cake by Suzie

Learn how to make New Home Consultant Suzie’s favourite not-so-guilty pleasure from The Healthy Chef.

Ingredients – cake

  • 125ml (1/2 cup) Grove extra virgin avocado oil
  • 125ml (1/2 cup) almond milk
  • 125ml (1/2 cup) pure maple syrup
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 3 teaspoons gluten free baking powder
  • 60g (1/2 cup) Dark Naked Chocolat or dark cocoa powder
  • 300g (3 cups) almond meal
  • Avocado frosting to serve

Ingredients – frosting

  • 2 ripe avocados
  • 125ml (1/2 cup) pure maple syrup
  • 125ml (1/2 cup) coconut cream
  • 2 teaspoons vanilla extract
  • 60g (1/2 cup) dark cocoa powder
  • Generous pinch of sea salt

Instructions – cake

  1. Preheat your oven to 160°C fan-forced
  2. Combine avocado oil, almond milk, maple syrup, eggs and vanilla into a bowl
  3. Add the baking powder, cocoa and almond meal and mix through until combined
  4. Bake for 45 minutes until cooked then remove from the oven to cool
  5. Combine and blend frosting ingredients until smooth, then ice the cake generously
  6. Store in the fridge until ready to serve
  7. Double the recipe if making a double layered cake with frosting
